Enjoy your food more when you use tomatoes as a base. Tomato chutney can be an accompaniment to many dishes ranging from pasta and risotto, to paneer and desserts. It’s a versatile way to have fun with food and allow yourself to be spontaneous in the kitchen.
Ingredients
- Tomatoes – 450 gms – diced
- Onions – 2 medium sized – diced
- Garlic Pods – whole – 8
- Peanuts – 50 gms
- Curry leaves – 4 sprigs
- Kashmiri red chillies – 5 nos
- Green chillies – 3 nos
- Chilly powder – 1 Tbsp
- Turmeric powder – 1/2 tsp
- Channa dal – 40 gms
- Jaggery – 1 Gooseberry size or 1 Tbsp
- Oil 4 Tbsp
- Hing / Asafoetida – 1/2 tsp
- Tamarind – Marble sized
Preparation
- Heat the pan and adjust to Medium flame
- Add OIL
- Add PEANUTS
- Add CHANNA DAL
- Now add the whole GARLIC pods followed by KASHMIRI CHILLIES
- Add ONIONS
- Add GREEN CHILLIES
- Add CURRY LEAVES
- Now its time for TOMATOES
- Saute well
- Add TAMARIND
- Add SALT
- Add CHILLY POWDER
- Add HING and mix well
- Add JAGGERY
- Mix and allow it to cool down.
- Once cool, transfer to a mixie jar
- Blend it into a fine paste
- The tomato chutney is done and ready to be served with idli or dosa or uttapam or snacks like masala vada, dal vada.
