Homemade McDonald’s Strawberry Creme Pie Recipe

    • 2 1/2 cups flour
    • 1 tsp salt
    • 6 tbsp unsalted butter, chilled and cubed
    • 2/3 cup vegetable shortening, chilled
    • 1/2 cup ice water

    • 2 cups hulled and chopped fresh strawberries
    • 8oz cream cheese, softened
    • 1 egg
    • 1/2 tsps vanilla extract
    • 1 cup plus 3 1/2 tbsp sugar
    • 3 tbsp cornstarch

    1. Preheat oven to 450 F. Mix flour and salt together in a large bowl, then add the butter and shortening.
    2. Mix all of the ingredients until mixture resembles coarse sand. You can do this with your fingers, a fork, or a food processor. Whatever works!
    3. Add ice cold water one tbsp at a time to the mixture until there is just enough moisture that the dough begins to stick to itself and forms large clumps. You don’t wanna see any dry bits.
    4. Transfer the dough onto a floured surface, and fold the dough into itself using floured hands. The dough should not be overly sticky and should come together easily. Cut the dough in half, and form two discs. Cover with plastic wrap and store in fridge for at least one hour but up to 5 days if you wanna save it for later.

    1. In a food processor, process strawberries with cornstarch. Add puree and 1 cup sugar to a medium saucepan. Bring to a boil, and then reduce heat until the mixture becomes thick like jam. Set aside.
    2. In medium bowl, combine together egg, vanilla, cream cheese and 3 ½ tbsp of sugar with a hand mixer until light and fluffy. Set aside. If it looks a lil clumpy, that’s okay!

    1. Roll pie dough out flat onto a floured surface and cut out rectangle shapes until there is no dough left, making sure to cut an even numbered amount so you have enough top and bottom layers to complete the hand pies.
    2. To the bottom layers of the pies, spoon some of each filling mixture down the center of the pie, making sure to stay clear of the edges so the pie doesn’t overflow.
    3. Place the top layer of dough on top of the filled bottom layer, and press the edges together with your fingers to seal the pie. Cut a slit down the center of the hand pie.
    4. Brush each pie with egg wash and place in the oven for 10-15 minutes or until golden brown.
    5. Enjoy!
