Brioche Cinnamon French Toast Recipe

    This recipe is an indulgence and is best for special occasions. It’s made with brioche bread, cream, eggs, and butter. The bread’s rich milk and egg mixture and the addition of cinnamon to the custard mixture make this breakfast a tasty delight.


    • 2 large eggs
    • 80ml / 1/3 cup of milk
    • 1 tsp cinnamon
    • 4 slices of brioche loaf

    To serve (optional)

    • Blueberries
    • Strawberries
    • Maple Syrup


    1. Mix the first three ingredients together in a small bowl
    2. Soak each slice of brioche on both sides until it has fully absorbed the batter
    3. Melt butter in a pan on a medium-high heat and grill the brad until golden brown


    • Use slightly stale bread to help it keep its shape when being dunked
    • Keep slices warm in an oven at 170C whilst you cook the remaining slices – do not stack them or they will go soggy
